Does anyone know of virtual machine images that have Lucee already
installed? I could download a LEMP server… but I haven’t been able to
successfully install Lucee on my own.

Have you tried commandbox?
After installatoin you could simply start a lucee server

LAS doesn’t manage VMs of Lucee for a couple reasons. Firstly, that would
be an incredible amount of work (and data to host) and secondly, no one is
just using stock VMs these days. We have Heroku build packs, Docker file,
and you can even find Vagrant boxes (which will build a VM for you).
If you’re just looking for local development, I’d go with Francesco’s
suggestion and grab CommandBox. It’s a no-install way to have any version
of Lucee (or ACF) up and running in minutes. I’m part of the CommandBox
project, so ask if you have more questions.
